10 Minute Superfoods Salad
Chopped Brussels Sprouts Spring Salad 🥗 Ready in just 10 minutes! And delicious to eat all spring & summer long. Packed with superfoods like kale, blueberries, and avocado.
Ingredients
10 ounces shaved Brussels sprouts
2 cups chopped kale
2 cups chopped spinach
2 cups blueberries
1 peeled & cubed avocado
1 cup chopped walnuts
1/3 cup diced onion
1/2 cup feta cheese
Dressing:
1/3 cup extra virgin olive oil
1/4 cup lemon juice
1 tsp lemon zest
1/2 tbsp dijon mustard
2 tbsp honey
2 tsp garlic powder
Salt & pepper to taste
Method
Add all of the salad ingredients to a bowl & toss
Mix together the dressing ingredients in a food processor
Add to the salad & toss again
Serve & enjoy! Makes about 6-8 servings!
