20 Minute Chicken Caprese Skillet

Ingredients

  • 2 tbsp olive oil
  • 2 garlic cloves
  • 4 small chicken breasts
  • 4 ounce mozzarella cheese
  • 1 cup tomatoes
  • 1/4 cup chopped basil
  • 1/4 cup balsamic vinegar
  • 1 tbsp honey
  • 1/2 lemon
  • Salt and pepper

Method

  1. heat a sikllet over medium heat
  2. Cook 2 minced cloves of garlic and 4 chicken breasts (seasoned with salt and pepper) in olive oil for 3-4 minutes on each side (until internal temperature is 165F)
  3. Add 1/2 lemon juice
  4. Cook 1/4 cup balsamic vinegar with 1 tbsp honey in a saucepan on simmer for 10 minutes
  5. Remove chicken from skillet and set aside
  6. Add olive oil and 1 cup tomatoes
  7. Cook for 3-4 minutes
  8. Add 1 ounce mozzarella on top of each piece of chicken
  9. Cook until cheese melts, another 3-4 minutes
  10. Add basil and balsamic drizzle on top
  11. Pair with pasta or enjoy on its own!
