Ingredients
- 2 tbsp olive oil
- 2 garlic cloves
- 4 small chicken breasts
- 4 ounce mozzarella cheese
- 1 cup tomatoes
- 1/4 cup chopped basil
- 1/4 cup balsamic vinegar
- 1 tbsp honey
- 1/2 lemon
- Salt and pepper
Method
- heat a sikllet over medium heat
- Cook 2 minced cloves of garlic and 4 chicken breasts (seasoned with salt and pepper) in olive oil for 3-4 minutes on each side (until internal temperature is 165F)
- Add 1/2 lemon juice
- Cook 1/4 cup balsamic vinegar with 1 tbsp honey in a saucepan on simmer for 10 minutes
- Remove chicken from skillet and set aside
- Add olive oil and 1 cup tomatoes
- Cook for 3-4 minutes
- Add 1 ounce mozzarella on top of each piece of chicken
- Cook until cheese melts, another 3-4 minutes
- Add basil and balsamic drizzle on top
- Pair with pasta or enjoy on its own!
