Apple Streusel Bread (Paleo, Gluten Free)

Ingredients

Apple streusel bread:
3 eggs
3/4 cup almond flour
1/4 cup + 1 tbsp coconut flour
1/2 cup maple syrup
1/4 cup applesauce
1/4 cup peanut butter* 
1 tsp vanilla
1 tsp cinnamon
1 tsp baking powder
1/2 green apple diced
Streusel topping:
1/4 cup coconut sugar
1/4 cup almond flour
1/4 cup pecans
1 tsp cinnamon
Sprinkle of salt
3 tbsp applesauce

Method

  1. In a large mixing bowl, whisk the eggs.
  2. Then add in the rest of the ingredients besides the apples.
  3. Mix well then fold in the apples.
  4. Line a loaf pan with parchment paper and add the batter in.
  5. In a food processor, add all of the ingredients for the topping and pulse together.
  6. Then add it on top of the loaf.
  7. Bake at 350F for 38-42 minutes! Let cool completely then slice and enjoy
