Avocado Egg Salad (paleo, gluten free, healthy)

Ingredients

  • 6 hard boiled eggs
  • 3 small avocados or 2 large avocados
  • 1 tsp garlic
  • 1 tsp lemon juice
  • 1 tsp parsley
  • 1/21 tsp crushed red pepper flakes
  • Salt and pepper to taste*

Method

  1. Boil the eggs for 10-12 minutes
  2. Peel
  3. Add to a bowl
  4. Add the avocado and spices
  5. Mash the eggs and avocado and mix together
  6. Eat as a side dish or turn it into a sandwich!
