BBQ Chicken Spaghetti Squash

This paleo bbq chicken spaghetti squash is a great healthy dish the whole family will enjoy!

Ingredients

1 Spaghetti Squash

2 chicken breasts

1 cup paleo bbq sauce

cilantro

onion

pepper

olive oil

Method

  1. Preheat oven to 400F
  2. Slice the spaghetti squash in half. If it’s too tough to slice, microwave it for 5 minutes to soften it.
  3. Then take a spoon and scoop out the seeds and the middle part. You can save the seeds and make delicious toasted seeds.
  4. Spray a pan with non stick spray and put the squash face down. Bake at 400F for 50 minutes
  5. When there’s 20 minutes left to go on the squash, heat a skillet over medium heat. When the skillet is hot- add a little bit of oil and the 2 chicken breasts.
  6. Cook for 6 minutes on each side- until the chicken is done all the way through
  7. Add cooked chicken to a bowl and shred with two forks. Then add 1 cup of bbq sauce and mix together
  8. Dice an onion and pepper.
  9. When the spaghetti squash is done- remove the spaghetti squash with a fork and put aside.
  10. Stuff the squash boat with the bbq chicken, onion, peppers, cilantro, and some of the squash.
