Caramel Apple Crisp
Caramel Apple Crisp (vegan and gluten free). A healthy fall breakfast or dessert. It’s so perfect with a scoop of ice cream on top!
Ingredients
- 4 apples of choice (I used 2 honey crisp and 2 Granny Smith)
- 1 tbsp coconut oil
- 2 tbsp maple syrup
- 1 tsp cinnamon
- 1/2 tsp nutmeg
Topping:
- 3/4 cup almond flour
- 2 tbsp maple syrup
- 1 tbsp coconut sugar
- 2 tbsp melted coconut oil
- 1 tsp cinnamon
Caramel Sauce:
- 1/2 cup dates
- 1/4 cup oat milk
- 1/2 tsp vanilla
Method
- Soak the dates in warm water for about 10 minutes
- Slice the apples.
- Heat a small, oven safe skillet for just a few minutes, add the coconut oil + apples + other apple
- ingredients.
- Sauté for 2-3 mins, not long just enough for the apples to be coated
- In a bowl, mix together the topping.
- Add the topping to the apples, I broke mine up into pieces so it was more crumbly. You don’t want the pieces to be super thick so make sure to break it up!
- Bake at 350F for 30-35 minutes.
- While it bakes, make the caramel sauce. In a food processor or blender, add the ingredients and blend.
- When it’s done cooking, remove and add the caramel sauce on top.
- Slice and enjoy!
