Cauliflower Gnocchi Plant Based Breakfast

This plant based, healthy savory breakfast plate is simple to make but oh so tasty!

Ingredients

1 package of Trader Joe’s Cauliflower Gnocchi 

1 tbsp avocado oil 

1 cup kale

Avocado 

Tomato 

Mushrooms 

Method

Cauliflower Gnocchi: 

  1. Add gnocchi to a microwave safe bowl. Microwave with a little bit of water in the bowl for 3-4 mins
  2. Heat a skillet over low medium heat. Once it’s hot, add enough avocado oil to coat the pan. Then add it cauliflower gnocchi
  3. Cook the gnocchi for 5-6 minutes, until it’s browned on the edges. Make sure you’re stirring it constantly so it doesn’t stick as bad. 
  4. Remove and serve immediately or store it in an airtight container.

Savory Breakfast Plate: 

  1. Once you remove the gnocchi, add in more avocado oil if needed. 
  2. Then add in the kale and cut mushrooms
  3. Sauté for 4-5 minutes. 
  4. Paired with avocado, Trader Joe’s everything but the bagel seasoning, and tomatoes
