Chicken Bacon Ranch Skillet

Ingredients
- 1 1/5 lbs chicken breast (about 3 chicken breasts
- 1 lb Brussels sprouts
- 1 white onion
- 6 slices of bacon
- 1/2–1 packet of ranch seasoning (depends on how much ranch flavor you want)
- 1/4 cup ranch dressing of choice
- 1/2 cup spinach
Method
- Heat your sauté pan over medium heat
- Add the bacon & cook for about 6 minutes
- While the bacon cooks, dice the onion & chicken
- remove the bacon & leave the bacon grease in the pan
- add the diced onion & sauté 1-2 minutes
- then add the chicken in
- add the ranch seasoning on top
- sauté for 6-7 minutes, until the chicken is cooked to 165F
- while it cooks, chop the Brussels sprouts
- Remove the onion & the chicken
- add the Brussels and cover with the lid.
- Cook for 6-7 minutes, until they are soft.
- Add a little water if needed to soften them.
- then add back in the chicken, bacon, and add the spinach
- stir together for about 1 minute, add the ranch dressing, and it’s done!
- let cool before adding the to meal prep containers
- I paired mine with rice! Makes 4-5 meals
