Chocolate Paleo Sweet Potato Waffle

Ingredients
1 cup mashed cooked sweet potato
1 egg
1/2 scoop Keto Collagen*
1 tbsp unsweetened cocoa powder
1 tsp cinnamon
1/4 cup unsweetened almond milk
2 tbsp coconut flour
Method
- For the sweet potato, either bake a sweet potato at 400F for 50-60 minutes or microwave one for 7 mins
- Peel the cooked sweet potato then mash.
- In a bowl, whisk the egg and almond milk
- Combine the sweet potato into the bowl then add in the collagen, cinnamon, cocoa powder, and coconut flour. Mix together well
- Spray your waffle iron with nonstick spray. Then spoon your waffle batter into it. Close lid and let cook for 10 minutes.
- Remove and serve with your favorite toppings! Served here with chocolate drizzle, cashew butter, and bananas.
