Cinnamon Banana Bread

Cinnamon Banana Bread that is paleo, gluten free, and healthy. An easy, healthy meal prep breakfast option. A healthy dessert option as well. Made with bananas, eggs, coconut flour, and lots of cinnamon for that delicious banana bread taste.

Ingredients

Banana Bread:

2 eggs
2 bananas
1/4 cup unsweetened almond milk
1/4 cup coconut flour
1 tbsp cinnamon
1/2 tsp baking powder
1/2 tsp vanilla
2 tbsp nut butter
Cinnamon sugar mixture:

1/4 cup coconut sugar

1/2 tsp cinnamon

Method

  1. Preheat oven to 350F
  2. In a bowl, whisk the eggs
  3. Then add in the rest of the bread ingredients and mix well.
  4. This recipe makes enough for 2 mini loaves*
  5. Grease 2 mini loaves then add 1/2 the batter to them.
  6. Then put 3/4 of the cinnamon sugar mixture on top.
  7. Top with the rest of the batter.
  8. Sprinkle the remaining cinnamon sugar mixture on top.
  9. Bake for 40-45 minutes.

Notes

*You can cut the recipe in 1/2 and make a mini loaf in a ramekin. Or double for a full loaf.
