Cinnamon Roll Donuts {paleo, gluten free, healthy}

Ingredients

Cinnamon roll donuts:
2 eggs
1 cup almond flour
1 tbsp coconut flour
1 tsp vanilla
1 tsp baking powder
1 tsp cinnamon
3 tbsp maple syrup
Cinnamon sugar layer:
2 tbsp coconut sugar
1 tsp cinnamon
1 tbsp almond milk
Icing:
2 tbsp coconut butter
1 tbsp maple syrup
1 tbsp almond milk

Method

  1. In a bowl, whisk the eggs.
  2. Then add in all of the donut ingredients.
  3. Mix together well. Grease a donut pan, add the batter in.
  4. Try to smooth it out if you can with a butter knife.
  5. In a small bowl, mix together the cinnamon sugar layer.
  6. Drizzle the cinnamon sugar layer on top of the donuts.
  7. Bake for 15 minutes at 350F.
  8. Let cool a little before adding the icing.
  9. In a bowl, add the icing ingredients.
  10. Microwave for 10 seconds, stir, repeat until it’s smooth.
  11. Drizzle on top of the donuts.
  12. Let the donuts cool before removing from donut pan.
  13. You can either eat right away or put them in the fridge for the icing to harden. You know I couldn’t wait
