Gluten Free Cinnamon Roll Loaf

Gluten Free Cinnamon Roll Loaf

Ingredients

Loaf:

4 eggs
2 cups almond flour
1/3 cup maple syrup
1 tsp vanilla
3 tsp cinnamon
2 tbsp applesauce (can sub butter or ghee here)
2 tsp baking powder
2 tbsp nut butter

Cinnamon sugar layer:
1/2 cup coconut sugar
2 tbsp melted ghee
2 tsp cinnamon

Method

  1. In a bowl, whisk the eggs, then add the rest of the bread ingredients in and mix together well. Line a loaf pan with parchment paper and add 1/2 the batter.
  2. In a small bowl, mix the cinnamon sugar layer together.
  3. Add 1/2 the cinnamon sugar mixture to the batter.
  4. Then add the rest of the batter on top.
  5. Drizzle the remaining cinnamon sugar mixture on top.
  6. Bake at 350F for 39-41 minutes.
  7. Let cool completely then drizzle melted coconut butter or powdered sugar mixed with mix on top!
  8. Slice and enjoy!
