Cinnamon Sugar Donuts (paleo, gluten free, healthy)

Ingredients

Donuts:

2 eggs
1 cup almond flour

2 tbsp maple syrup

1/2 tsp vanilla

1/2 tbsp coconut sugar

1 tbsp nut butter

1 tsp cinnamon

1 tsp baking powder

Cinnamon Sugar Topping: 

1 tbsp coconut oil

2 tbsp coconut sugar 

2 tsp cinnamon.

Method

  1. Preheat oven to 350F
  2. In a bowl, whisk the eggs
  3. then add in almond flour, maple syrup, vanilla, coconut sugar, nut butter, cinnamon, and baking powder.
  4. Mix the donut batter together
  5. Then grease a donut pan (I use a silicone one to make it easier to pop the donuts out).
  6. Pour batter about 3/4 of the way in the donuts.
  7. Bake for 14-15 minutes.
  8. Remove from the oven, let cool for a few minutes.
  9. Then pop out of the donut molds and brush with some melted coconut oil.
  10. Mix together the cinnamon and coconut sugar
  11. Sprinkle on top of the donuts
  12. Store in the fridge or eat right now! 
  13. Makes 6 donuts
