Vegan Cookie Dough Ice Cream Sandwiches

Ingredients

Cookie dough:
1 cup almond flour
1/4 cup coconut sugar
1/4 cup softened coconut oil (not melted completely)
2 tsp vanilla
1/4 cup almond milk
1/2 tsp salt
Ice Cream:
3 frozen bananas
3 tbsp cashew butter
2 tsp vanilla
Sprinkle of salt

Method

  1. For the cookie dough:
  2. Mix all of the ingredients together well besides the chocolate chips.
  3. Then fold in the chocolate chips.
  4. Line a 8×8 or 9×5 brownie pan with parchment paper (if you double this recipe, use a small cookie sheet instead)
  5. Press the cookie dough into the pan and flatten it out.
  6. Place in the freezer for two hours
  7. When the cookie dough is almost done, make the ice cream
  8. Blend all of the ice cream ingredients together.
  9. Then remove the cookie dough and cut into 6 rectangles (can do squares too)
  10. Then add ice cream to one half and press the other half on top of each piece, making the sandwiches.
  11. Place back in the freezer for another hour or until the ice cream is hardened.
  12. Remove and enjoy immediately!
  13. Store in the freezer.
  14. Makes 3 big ice cream sandwiches
