Cookie Dough Ice Cream Sandwiches

Ingredients
Cookie dough:
1 cup almond flour
1/4 cup coconut sugar
1/4 cup softened coconut oil (not melted completely)
2 tsp vanilla
1/4 cup almond milk
1/2 tsp salt
Ice Cream:
3 frozen bananas
3 tbsp cashew butter
2 tsp vanilla
Sprinkle of salt
Method
- For the cookie dough:
- Mix all of the ingredients together well besides the chocolate chips.
- Then fold in the chocolate chips.
- Line a 8×8 or 9×5 brownie pan with parchment paper (if you double this recipe, use a small cookie sheet instead)
- Press the cookie dough into the pan and flatten it out.
- Place in the freezer for two hours
- When the cookie dough is almost done, make the ice cream
- Blend all of the ice cream ingredients together.
- Then remove the cookie dough and cut into 6 rectangles (can do squares too)
- Then add ice cream to one half and press the other half on top of each piece, making the sandwiches.
- Place back in the freezer for another hour or until the ice cream is hardened.
- Remove and enjoy immediately!
- Store in the freezer.
- Makes 3 big ice cream sandwiches
