Egg Roll In A Bowl

20 Minute, One Pan Meal 🍽️ This Asian inspired egg roll in a bowl is always a good idea but especially during this busy season! Fuel your body with lots of veggies and protein. Plus it’s perfect for meal prep!

Ingredients

1 pound ground chicken or turkey 

1 14 ounce package coleslaw mix

1 cup shredded carrots 

1/2 diced onion 

2 tbsp coconut aminos (can sub soy sauce) 

1 tsp ginger

1 tsp garlic powder

1 tsp sesame oil

Spicy Mayo Sauce:

1/3 cup mayo 

12 tbsp sriracha 

1 tsp coconut aminos

Method

  1. Heat a pan over medium heat 
  2. Add a little oil, diced onion, and ground chicken/turkey 
  3. Cook for 4-5 minutes, until cooked through
    4. Stir in Coleslaw mix, carrots, garlic, ginger, soy sauce, sesame oil and stir. 
  4. Cover and let cook for 7-8 minutes, until the coleslaw is softened 
  5. While it cooks, make your sauce. Combine all of the ingredients in a bowl and stir well
    7. When the skillet is ready, serve and top with green onions + sauce 
  6. Enjoy!
