Fluffiest Banana Pancakes
These healthy, easy pancakes are made with only 6 ingredients and are so tasty!
Ingredients
1 ripe banana
3 eggs
1 1/2 cup almond flour
1 1/2 tsp baking powder
1 tsp vanilla
1 tsp cinnamon
Method
- In a bowl, whisk the eggs. Mash the banana and add it in. Mix together but leave the banana a little lumpy- it helps keep the pancake texture
- Add in the almond flour, vanilla, cinnamon, and baking powder.
- Mix everything together but it’s okay if it’s a little lumpy- it gives it a better texture.
- Heat a skillet over low medium heat and add in whatever oil you use- I use coconut oil.
- Use a spoon and spoon 2 scoops of the mixture. Cook until the batter starts to bubble and flip.
- Makes 8 small pancakes
