Gluten Free and Vegan Tofu “Chicken” Fingers

10 tofu strips 1x
Tofu "chicken" fingers (gluten free, vegan, healthy)

Ingredients

1 12 ounce package of tofu
1/4 cup almond milk
1/4 cup tapioca flour
Breading mixture:
3/4 cup almond flour
1/4 cup nutritional yeast
1 tbsp olive oil
1/2 tsp paprika
1/2 tsp garlic
1/4 tsp salt
Buffalo topping:
1 cup buffalo sauce 

Method

  1. Press the tofu for 20- 30 minutes then cut into 8-10 strips.
  2. In a shallow bowl, add the tapioca flour.
  3. In another shallow bowl, add the almond milk
  4. Then in a bowl mix together the breading mixture
  5. Dip in the tapioca flour, then the almond milk, then the breading mixture.
  6. Repeat for each tofu strip 
  7. Add to a greased baking sheet 
  8. Bake at 425F for 40 mins
  9. Then remove, let cool a little, and brush with the buffalo sauce!
  10. Served with vegan ranch!
