Gluten Free Peanut Butter Cookie Ice Cream Sandwiches
Gluten free, peanut butter ice cream sandwiches that are made with only 5 ingredients. This healthy, easy dessert is the perfect way to enjoy a late night treat!
Ingredients
Cookies:
1 cup runny peanut butter
1/2 cup coconut sugar
1 egg
Ice Cream:
1 pint whatever ice cream you love. I used Aldi’s version of vanilla Halo Top.
Chocolate Topping:
1/2 cup Chocolate Chips ( I used Enjoy Life Foods)
1 tbsp coconut oil
Method
Cookies:
- Preheat oven to 325F
- In a bowl, whisk 1 egg. Then add in peanut butter and coconut sugar. Mix together.
- Line a baking sheet with parchment paper. Use a cookie scoop to make the cookies. Place them on the parchment paper. Makes 12 cookies.
- Bake for 15 minutes.
- Remove from the oven and place the pan in the freezer for 1 hour so the cookies harden.
Ice Cream Sandwiches:
- Once the cookies have been in the freezer for an hour, remove.
- Add 2 scoops of ice cream in between 2 cookies. Because the cookies are frozen, you should be able to squish them together to flatten out the ice cream.
- Optional: melt 1/2 cup chocolate chips with 1 tbsp of coconut oil to make a chocolate layer for the cookies.
- Dip 1/2 of the sandwiches in the chocolate layer.
- Place the cookies back on the parchment paper, put back in the fridge for 2-3 hours.
- Enjoy! Makes 6 sandwiches. Store in the freezer.
