Gluten Free Sheet Pan Pancakes

Sheet Pan Pancakes (gluten free, healthy, meal prep). A healthy meal prep breakfast that is easy to make and delicious! Kid friendly meal prep breakfast.

Sheet Pan Pancakes (gluten free, healthy, meal prep)

Ingredients

Pancakes:

  • 2 eggs
  • 3/4 cup vanilla Greek yogurt
  • 1 cup oat flour
  • 2 tbsp vanilla protein
  • 1 1/2 tsp cinnamon
  • 1 1/2 tsp baking powder

Toppings:

  • 1 cup berries
  • 1/2 banana

Method

  1. Mix the pancakes ingredients into a bowl, lit them sit for 5 minutes
  2. Add to a greased sheet pan
  3. Add the toppings
  4. Bake at 375F for 25 minutes
  5. Let cool 10 minutes then slice
  6. Paired with Greek yogurt and peanut butter, made about 4-5 meals!
