Spicy Chipotle Grilled Chicken Sandwiches

Recreating my favorite local sandwich shop sandwich! The perfect way to use leftover grilled chicken too.

Ingredients

8 slices of bread 

2 chicken breasts, grilled

8 slices of bacon 

1/2 yellow onion, sliced 

1 head of romaine lettuce 

1 avocado 

2 small tomatoes 

4 ounces mozzarella 

Chipotle aioli: 

1 cup mayo 

3 chipotle peppers in adobo sauce

2 tsp lime juice 

1 tbsp cilantro 

1/4 tsp salt 

1/2 tsp garlic 

1/4 tsp pepper

Method

  1. I used leftover grilled chicken breasts so that saved me a step! 
  2. Heat a pan over medium heat 
  3. Add bacon and cook for a few minutes on each side until crispy. Save the grease in the pan 
  4. While the bacon cooks, blend the chipotle aioli ingredients 
  5. After the bacon is done, add the sliced onion to the pan and caramelize for 5-7 minutes, stirring occasionally 
  6. Preheat oven to 375F
  7. Assemble the sandwiches. On one side, add tomato + mozzarella. On the other, add grilled chicken + bacon + onions. Toast until the cheese is melted 
  8. Then add a few slices of romaine lettuce, 1/4 avocado, and a drizzle of Chipotle aioli to each sandwich 
  9. Combine and enjoy! 
  10. This makes 4 sandwiches
