Ingredients

1 cup cashew butter

1 egg

1/2 cup coconut sugar

1 tsp baking powder

12 tbsp vanilla protein 

1/2 cup chocolate chips

1/4 cup marshmallows

Method

  1. Preheat oven to 350F 
  2. In a bowl, whisk your egg then add in the cashew butter, coconut sugar, and baking powder. 
  3. Mix all of these ingredients together well until the batter is smooth 
  4. Fold in with a spatula your chocolate chips and marshmallows
  5. Line a baking sheet with parchment paper. 
  6. Use a cookie scoop to form the cookies, I added a little batter to each though. 
  7. Makes about 9-10 small cookies. 
  8. Bake for 10 minutes, remove from oven, let cool on the baking sheet for 5 more minutes to let them finish cooking. 
  9. Enjoy! 
  10. Store on the counter for 3-5 days.
