Ingredients
1 cup cashew butter
1 egg
1/2 cup coconut sugar
1 tsp baking powder
1–2 tbsp vanilla protein
1/2 cup chocolate chips
1/4 cup marshmallows
Method
- Preheat oven to 350F
- In a bowl, whisk your egg then add in the cashew butter, coconut sugar, and baking powder.
- Mix all of these ingredients together well until the batter is smooth
- Fold in with a spatula your chocolate chips and marshmallows
- Line a baking sheet with parchment paper.
- Use a cookie scoop to form the cookies, I added a little batter to each though.
- Makes about 9-10 small cookies.
- Bake for 10 minutes, remove from oven, let cool on the baking sheet for 5 more minutes to let them finish cooking.
- Enjoy!
- Store on the counter for 3-5 days.
