Healthy Taco Soup

A healthy taco soup made in the Instant Pot with an easy paleo option. Made with real ingredients and a quick, easy dinner.

Ingredients

1 lb ground beef or turkey 

4 cups beef or chicken bone broth 

1/2 onion

2 bell peppers

1 15 ounce can black beans

1 15 ounce can pinto beans

1 4 ounce can green chiles

1 15 ounce can diced tomatoes

1/2 cup salsa

olive oil 

3 tbsp taco seasoning 

1 tsp chili powder

Method

  1. Heat your pressure cooker on the SAUTE setting. 
  2. Dice the onion. 
  3. Add a small amount of olive oil to the pot, then add the onion and your meat. Add 1 tbsp of your taco seasoning. Sauté until the meat is browned, about 5 minutes. 
  4. While the meat and onions cook, dice your peppers and open the rest of the ingredients. You’ll want to drain and rinse your beans. 
  5. Turn the sauté setting off, drain some of the grease out of the pot (optional), put the pot back, then add the rest of your ingredients. 
  6. Lock the lid on the pot, set the pressure cooker setting on high and set the timer for 10 minutes. 
  7. Once the timer ends, let the soup sit for 5 minutes then quick release to let the heat out
  8. Enjoy!
