High Protein Avocado Egg Salad

Ingredients
- 3 hard-boiled eggs, chopped
- 1 ripe avocado
- 2 tbsp cottage cheese or Greek yogurt
- 2 tbsp diced red onion
- Juice of 1/2 lemon
- 1 tsp garlic powder
- 1 tsp parsley
- 1/2 tsp salt
Method
- Peel and chop the hard-boiled eggs into small pieces.
- In a medium bowl, mash the avocado until mostly smooth.
- Add cottage cheese or Greek yogurt and mix until creamy.
- Stir in chopped eggs, red onion, lemon juice, garlic powder, parsley, and salt.
- Mix until well combined.
- Taste and adjust seasoning as needed.
- Serve immediately or chill for 30 minutes before serving.
