High Protein Avocado Egg Salad

Ingredients

  • 3 hard-boiled eggs, chopped
  • 1 ripe avocado
  • 2 tbsp cottage cheese or Greek yogurt
  • 2 tbsp diced red onion
  • Juice of 1/2 lemon
  • 1 tsp garlic powder
  • 1 tsp parsley
  • 1/2 tsp salt

Method

  • Peel and chop the hard-boiled eggs into small pieces.
  • In a medium bowl, mash the avocado until mostly smooth.
  • Add cottage cheese or Greek yogurt and mix until creamy.
  • Stir in chopped eggs, red onion, lemon juice, garlic powder, parsley, and salt.
  • Mix until well combined.
  • Taste and adjust seasoning as needed.
  • Serve immediately or chill for 30 minutes before serving.
