Instant Pot Vegan Burrito Bowls

Instant Pot Vegan Burrito Bowls (gluten free, plant based). Healthy meal prep recipe that is perfect to make for lunch all week long.

Instant Pot Vegan Burrito Bowls (gluten free, plant based)

Ingredients

  • 1 onion
  • 2 bell peppers
  • 2 15 ounce cans of corn
  • 1 15 ounce can chickpeas
  • 2 cups water
  • 1 tbsp chipotle juice
  • 1 cup rice
  • 1 packet of taco seasoning
  • 1/2 cup salsa
  • 1/4 cup nutritional yeast (optional)

Method

  1. Dice the onion and peppers
  2. Add a little olive oil on the bottom of the pot and turn on sauté mode
  3. add the diced veggies and sauté for 3-4 minutes
  4. Then add the taco seasoning on top along with the corn, chickpeas, salsa, chipotle sauce, and the rice.
  5. Pour water on top.
  6. Do not stir the rice in!
  7. Pressure cook on the rice setting for 12 minutes.
  8. Release the pressure
  9. Remove and add to your meal prep containers/ add toppings!
  10. Makes enough for about 5-6 meals
