Ingredients
15 ounce cans chickpeas, drained and rinsed
4 ounces feta cheese
1/2 cup finely diced red onion
1/4 cup chopped basil
2 tbsp olive oil
2 tbsp lemon juice
1/2 tsp lemon zest
1 tbsp honey
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
Method
Drain and rinse the chickpeas
Pat dry
In a small bowl, whisk together the olive oil, lemon juice, lemon zest, spices, & honey
Add the chickpeas to a bowl with the onion, basil, feta, & the lemon mixture
Stir and serve with fresh pita bread, pita chips, eat in a wrap, etc!
