Lemon Blueberry Bread {paleo, gf, healthy}

Ingredients

3 eggs

3/4 cup almond flour

1/4 cup coconut flour

1/2 cup maple syrup

1 tsp baking powder

1 tbsp zest of lemon

1/2 lemon squeezed

1 1/2 tbsp melted ghee or softened butter

1/2 cup blueberries

Method

  1. Preheat oven to 350F
  2. In a bowl, whisk the eggs.
  3. Then add in the flour, lemon zest, maple syrup, baking powder, lemon juice, and butter.
  4. Mix everything together well with a mixer.
  5. Fold in the blueberries with a spatula.
  6. Then line a loaf pan with parchment paper.
  7. Bake in the oven for 45-48 minutes.
  8. Let cool and devour
  9. Store in the fridge for 4-5 days
