Lemon Feta Chickpea Salad

1, 15 ounce can of chickpeas (drained and patted dry) 

4 ounces of feta cheese, crumbed 

1/2 cup cucumber, diced 

1/4 cup finely diced red onion

1/3 cup chopped spinach 

Dressing:

2 tablespoons olive oil

2 tablespoons lemon juice

1/2 teaspoon lemon zest

1 tablespoon honey 

1/2 teaspoon kosher salt

1/4 teaspoon black pepper

1/2 tsp dried parsley
