Cinnamon Prune Muffins

Ingredients
2 eggs
2 mashed bananas
1/4 cup + 1 tbsp coconut flour
2 tbsp nut butter
1 tbsp cinnamon
1/2 tsp vanilla
1/2 tsp baking powder
1/4 unsweetened almond milk
1/2 cup chopped California Prunes
Method
- Preheat oven to 350F
- In a bowl, whisk the eggs
- Then add in the coconut flour, almond milk, mashed bananas, nut butter, cinnamon, vanilla, and baking powder.
- Mix everything together well
- Then add in your California Prunes
- Fold those into the recipe so you don’t mash them
- Line a muffin pan with liners.
- Scoop the batter about 3/4 of the way into the cups.
- Bake for 30-32 minutes
- Let cool completely before removing from liner.
- Enjoy! Makes 7-8 muffins
