Ingredients
Salmon:
1 fillet of salmon (mine was about 3 pieces)
Olive oil
1/4 tsp Chipotle powder
3 tbsp maple syrup
Salt and pepper
Brussel sprouts:
1 lb brussel sprouts
1 tbsp olive oil
2 tbsp balsamic vinegar
1 tsp garlic powder
Salt and pepper
Sweet potatoes:
2 large sweet potatoes
2 tbsp olive oil
Salt and pepper
Method
- Preheat oven to 425F
- Cut the sweet potato into cubes and add to a large mixing bowl
- Add the olive oil, salt, and pepper
- Add to a greased baking sheet or a baking sheet lined with parchment paper
- Then cut the brussel sprouts in half, add to a mixing bowl.
- Add the olive oil, balsamic, and spices. Mix well to make sure they’re all coated
- Add to the oven for 30 minutes
- Remove, make room for the salmon in the middle of the pan
- Brush the salmon with a little olive oil, then maple syrup, then Chipotle powder and salt/pepper. I poured the maple syrup into a small bowl to make it easy to brush on!
- Place pan in the oven for 13-14 minutes.
- Depends on how thick your salmon is.
- Enjoy!
