Maple Chipotle Salmon One Pan Meal (paleo, gluten free)

Ingredients

Salmon:
1 fillet of salmon (mine was about 3 pieces)
Olive oil
1/4 tsp Chipotle powder
3 tbsp maple syrup
Salt and pepper
Brussel sprouts:
1 lb brussel sprouts
1 tbsp olive oil
2 tbsp balsamic vinegar
1 tsp garlic powder
Salt and pepper
Sweet potatoes:
2 large sweet potatoes
2 tbsp olive oil
Salt and pepper

Method

  1. Preheat oven to 425F
  2. Cut the sweet potato into cubes and add to a large mixing bowl
  3. Add the olive oil, salt, and pepper
  4. Add to a greased baking sheet or a baking sheet lined with parchment paper
  5. Then cut the brussel sprouts in half, add to a mixing bowl. 
  6. Add the olive oil, balsamic, and spices. Mix well to make sure they’re all coated
  7. Add to the oven for 30 minutes
  8. Remove, make room for the salmon in the middle of the pan
  9. Brush the salmon with a little olive oil, then maple syrup, then Chipotle powder and salt/pepper. I poured the maple syrup into a small bowl to make it easy to brush on!
  10. Place pan in the oven for 13-14 minutes.
  11. Depends on how thick your salmon is.
  12. Enjoy!
