Maple Pecan Stovetop Oatmeal (gluten free, vegan)

Ingredients

1 cup gluten free old fashioned rolled oats 
1 1/2 cup almond milk
1-2 tbsp maple syrup
1 tsp cinnamon
1/2 tsp nutmeg
2 tbsp chopped pecans
1/2 tsp vanilla

Method

  1. Heat the milk and oats together until they start bubbling
  2. Then add in the maple syrup, pecans, vanilla, cinnamon, and nutmeg
  3. Stir together and let it cook for 8-10 minutes until it thickens
  4. For the toppings, I added 1/2 banana, some  organic peanut butter, a few more pecans, and Greek yogurt! Use vegan yogurt to keep it plant based!
