Meal Prep Honey Garlic Chicken and Broccoli
Healthy Honey Garlic Chicken Meal Prep. An easy one skillet meal to meal prep for the week! Healthy and ready in under 20 minutes.
Ingredients
- 3 cups broccoli
- 3 chicken breasts
- 4 cloves of garlic, minced
- 1/4 cup + 2 tbsp honey
- 1/4 cup + 2 tbsp coconut aminos
- 1/4 cup water
- 2 tbsp arrowroot starch (sub cornstarch)
- 2 cups rice
- Olive oil
Method
- Heat a pan over medium heat
- Sauté 3 cups broccoli for 5 minutes in olive oil
- Remove from skillet and set aside
- Sauté 4 cloves of garlic, minced
- Add in more olive oil, garlic, chicken breasts (seasoned with salt and pepper and cut into cubes)
- Cook the chicken until it’s browned, about 5-7 minutes depending on how small you cube the chicken
- In a small bowl, mix the honey, coconut aminos, and water
- Add on top of the chicken once it’s browned
- Let it simmer for a few minutes
- Stir in arrowroot powder and let it thicken for a minute or two
- Remove and serve with cooked rice
- Makes 4 meals
