Meal prep thai chicken wraps

Thai Chicken Wraps (healthy meal prep)

Ingredients

Chicken Wraps:

3 chicken breasts
5 carrots
1 English cucumber
1/2 cup red cabbage
5 tortilla wraps of choice
Sauce:
1/3 cup peanut butter
1/4 cup water
1 tbsp maple syrup
1 tbsp coconut aminos
1 tbsp apple cider vinegar

Method

  1. Whisk the sauce ingredients in a small bowl
  2. Cut the chicken into cubes
  3. Heat a skillet over medium heat
  4. Add olive oil & the chicken
  5. Sauté for about 5-6 minutes, until it’s cooked
  6. Add 1/2 of the sauce mixture & let it simmer for 2-3 minutes
  7. Remove & let cool
  8. Slice your veggies
  9. Storage:
  10. Store the sauce & veggies & chicken in separate containers in the fridge.
  11. On the day you want a wrap, assemble it
  12. Add sauce, chicken, cabbage, carrots, & cucumbers to the wrap & roll!
  13. Wraps can get soggy in the fridge so I wouldn’t make it more than 24 hours in advance! Makes enough for 5-6 wraps!
