No Bake Sugar Cookie Bars

The perfect paleo, gluten free, vegan dessert that is no bake and made with only 5 ingredients. A great healthy dessert to help stay on track with new years goals. Easy to make and so tasty!

Ingredients

Sugar Cookie Bars:

1 cup nut butter (I used Justins Cashew Butter
1/2 cup coconut flour 
1/2 cup maple syrup 
2 tbsp vanilla collagen or vegan protein 
1 tsp cinnamon

ICING:

1/2 cup coconut butter

1/2 cup maple syrup

Method

  1. In a bowl, mix all of the sugar cookie bar ingredients together. Mix with a hand mixer or stand mixer until smooth.
  2. Then line a brownie pan with parchment paper. It doesn’t fill the entire pan but it’s easy to shape into a square.
  3. Smooth the batter out then put the pan in the freezer for 2 hours at least.
  4. Remove and top with the icing: 
  5. For the icing, mix the coconut butter and maple syrup in a small, microwave safe bowl.
  6. Melt for 30 seconds in the microwave and mix it together.
  7. I’ll make the icing about 10-15 minutes before I need it.
  8. Add the icing to the bars then put the pan back in the freezer for 30 mins- an hour to let it harden.
  9. Enjoy!
