Ingredients
- 1/2 cup cashew butter
- 1/4 cup coconut flour
- 1/4 cup maple syrup
- 2 tbsp vegan vanilla protein
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 cup shredded carrot (patted dry)
- 1/4 cup raisins
Method

Mix together the cashew butter, coconut flour, maple syrup, vanilla protein, cinnamon and nutmeg

Then mix in the shredded carrot and raisins

Line a plate with parchment paper.

Take a cookie scoop, scoop out batter, flatten cookies onto parchment paper.

Makes 6-7 cookies

Place in the freezer for 1 hour

Remove and add frosting (optional)

Store in the fridge for up to 5-6 days!
