No Bake Carrot Cake Cookies (vegan, gluten free)

Ingredients

  • 1/2 cup cashew butter
  • 1/4 cup coconut flour
  • 1/4 cup maple syrup
  • 2 tbsp vegan vanilla protein
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup shredded carrot (patted dry)
  • 1/4 cup raisins

 

Method

  1. Mix together the cashew butter, coconut flour, maple syrup, vanilla protein, cinnamon and nutmeg

  2. Then mix in the shredded carrot and raisins

  3. Line a plate with parchment paper.

  4. Take a cookie scoop, scoop out batter, flatten cookies onto parchment paper.

  5. Makes 6-7 cookies

  6. Place in the freezer for 1 hour

  7. Remove and add frosting (optional)

  8. Store in the fridge for up to 5-6 days!
