Ingredients
1 white onion, dicedÂ
1 bell pepper, dicedÂ
1 tbsp oil
1 1/2 cups sweet potato, peeled and cut into small cubesÂ
Spices:
1 1/2 tsp garlic powderÂ
1 tsp cuminÂ
1 1/2 tsp chili powder
1, 15 oz can black beans, drained and rinsed
1, 15 ounce can cornÂ
1,15 ounce can enchilada sauce
5 gluten free corn tortillas, cut into strips
1 cup vegan cheese
Method
- Heat a large skillet over medium heatÂ
- Add the oil + diced onions and peppers to the pan and sautĂ© for about 5 minutes. Add the sweet potatoes continue sautĂ©ing another 10-12 minutes until the sweet potato is fork tender. Stir frequentlyÂ
- Add the black beans, corn, corn strips, enchilada sauce, and spices Lower heat and stir well to mix. Let simmer for a few minutes.
- Sprinkle the cheese over the top of the skillet. Turn the oven on broil and broil for just 1-2 minutes, until the cheese is melted.Â
- Remove from heat and serve!
