Overnight Vegan Blueberry Chia Pudding. A healthy, vegan, plant based, gluten free breakfast that is easy to meal prep.

Ingredients
- 1 cup unsweetened almond milk
- 3 tbsp chia seeds
- 1 tbsp vanilla protein ( I used ritual )
- 1 tsp cinnamon
- 1/2 cup warmed or mashed blueberries (helps them blend in better)
Method
- In a jar that has a lid, add the almond milk, chia seeds, vanilla protein, cinnamon and blueberries
- Shake up and refrigerate overnight
- Topped the next morning with yogurt + warmed blueberries + organic peanut butter!
