Paleo and Gluten Free 4 Ingredient Pumpkin Pancakes

Ingredients
1 egg
1/3 cup pumpkin purée
2 tsp coconut sugar
1 tbsp almond flour
1 tsp pumpkin pie spice* optional
Method
- Whisk the egg then add in everything else
- Heat a skillet over low medium heat and wait for it to get hot before adding the batter
- Add a little coconut oil or butter to the pan then add a spoonful of batter.
- Cook for 4 minutes then flip. Pay attention to the time because you don’t want to flip too early!
- Repeat for each pancake, I did 3 at once in my pan.
- Topped with maple syrup + Greek yogurt. These aren’t super sweet so add maple syrup or honey on top if you want!
