Paleo and Gluten Free Gingerbread Pancakes

Gingerbread Pancakes (paleo and gluten free)

Ingredients

  • 3 eggs
  • 1 banana 
  • 1 1/2 cups almond flour
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1 tsp molasses
  • 1 tsp coconut sugar
  • 1 tsp ginger
  • 1/4 tsp ground cloves
  • 1/2 tsp nutmeg
  • 1 1/2 tsp baking powder

Method

  1. Heat a skillet over low medium heat
  2. In a bowl, Whisk the eggs
  3. then mash the banana
  4. add in everything else! 
  5. Mix everything together.
  6. Add a little oil or butter to a skillet, make mini pancakes because they’re easier to flip!
  7. Cook for about 2 mins, flip, cook 1-2 more.
  8. Makes 8 mini pancakes!
  9. Topped with butter and pure maple syrup!
