Paleo and Gluten Free Iced Maple Cookies

Ingredients
Cookies:
2 eggs
1 cup + 1/4 cup almond flour
1/4 cup coconut flour
1/4 cup + 2 tbsp cashew butter
1/4 cup + 2 tbsp maple syrup
2 tbsp Ancient Nutrition vanilla collagen
1 tsp baking powder
Optional- 1/3 cup nuts or chocolate chips
Maple glaze:
2 scoops Ancient Nutrition vanilla collagen
2 tbsp maple syrup
1 tbsp cashew butter
1 tbsp almond milk
Method
- Whisk the eggs then add in all of the other cookie ingredients and mix well.
- Then add in anything like chocolate chips or nuts.
- Use a cookie scoop and scoop out a small amount on to a greased baking sheet then flatten.
- Preheat oven to 350F. Then bake 14-15 minutes.
- Leave them on the pan and let them cool completely. This is so important in almond flour recipes!
- Then mix the icing ingredients together in a small bowl.
- Melt in the microwave for 15 seconds.
- Then drizzle on the cookies.
- You can let the glaze harden or enjoy ASAP!
- Makes 15 small cookies.
