Paleo and Gluten Free Iced Maple Cookies

Iced Maple Cookies (paleo, gluten free)

Ingredients

Cookies:

2 eggs
1 cup + 1/4 cup almond flour
1/4 cup coconut flour
1/4 cup + 2 tbsp cashew butter
1/4 cup + 2 tbsp maple syrup
2 tbsp Ancient Nutrition vanilla collagen
1 tsp baking powder
Optional- 1/3 cup nuts or chocolate chips
Maple glaze:

2 scoops Ancient Nutrition vanilla collagen
2 tbsp maple syrup
1 tbsp cashew butter
1 tbsp almond milk

Method

  1. Whisk the eggs then add in all of the other cookie ingredients and mix well.
  2. Then add in anything like chocolate chips or nuts.
  3. Use a cookie scoop and scoop out a small amount on to a greased baking sheet then flatten.
  4. Preheat oven to 350F. Then bake 14-15 minutes.
  5. Leave them on the pan and let them cool completely. This is so important in almond flour recipes!
  6. Then mix the icing ingredients together in a small bowl.
  7. Melt in the microwave for 15 seconds.
  8. Then drizzle on the cookies.
  9. You can let the glaze harden or enjoy ASAP!
  10. Makes 15 small cookies.
