Paleo Breakfast Quesadilla
A paleo and gluten free breakfast quesadilla packed with veggies and simple to make!
Ingredients
2 Grain Free Quesadillas
1/4 cup chopped bell pepper
1/4 cup chopped spinach
2 eggs
1/4 chopped onion
Salsa
Red Pepper Flakes
Avocado oil
Method
- Heat skillet over low medium heat and turn oven on broil
- Add some oil and chopped pepper, onions, and spinach into the skillet
- Sauté for 5 minutes or until soft
- Whisk two eggs in a bowl then add into the skillet, cook another 2 minutes
- Spray a pan with non stick spray, layer a tortilla on, then add in egg mixture, top with another tortilla
- Cook for 4-5 minutes on broil- keep an eye on them, they burn easily!
Notes
You could also cook these in a skillet vs the oven!
