Paleo Chicken Noodle Soup
This healthy, paleo chicken noodle soup is the best and easiest dinner.
Ingredients
2 chicken breasts
1 onion
5 carrots
3 celery stocks
1/2 tsp oregano
1/2 sp parsley
1/4 tsp turmeric
1/2 tsp thyme
4 cups chicken bone broth
2 cups water
3 zucchini
Avocado Oil
salt
Method
- Heat a pot over medium heat.
- Cut chicken into cubes
- Add enough oil to coat the pan then add the chicken in.
- Sauté the chicken until it’s browned, about 10 minutes.
- While the chicken cooks, chop the veggies.
- Then remove the chicken from the pan
- Add more oil if needed and add the veggies, cook for 10 more minutes, then add the spices and cook for one more minute.
- While the veggies cook, spiralize the zucchini.
- After the spices are added and cooked a minute, add in the bone broth and water and chicken. Bring the pot to a boil and let boil for 3 minutes.
- Turn the pot to low heat and add in the zoodles. Let cook until the zoodles are soft, about 3-4 mintues.
- Salt to taste!
