Paleo Chunky Monkey Bars

These paleo chunky monkey bars are the perfect no bake dessert. Gluten free and made with real, simple ingredients. A great easy, healthy dessert.

Ingredients

For the bars: 

1 cup cashew butter 

1/2 mashed banana 

1/3 cup coconut flour

1/4 cup maple syrup 

1 tbsp cinnamon 

1/4 cup chocolate chips 

Chocolate Layer: 

1/2 cup chocolate chips 

2 tbsp cashew butter

Method

  1. In a bowl, mix together the bar ingredients: the mashed banana, cashew butter, coconut flour, maple syrup, and cinnamon. Then add in the chocolate chips. Mix together well. 
  2. Line a brownie/cake pan with parchment paper. Pour the batter into it. Put it in the fridge for 5-10 minutes to let it harden. 
  3. While the bars are in the fridge, make the chocolate layer. 
  4. In a small, microwave safe bowl- mix together the 1/2 cup chocolate chips and cashew butter. microwave for 30 seconds, stir, and microwave again for 15 seconds and repeat the heat/stir until fully melted. 
  5. Take the bars out of the fridge, add the chocolate layer on top, smooth with a spatula, and add to the freezer for 2-3 hours. 
  6. Remove, slice, and enjoy 🙂 
  7. Makes 9 bars, store in the freezer
