Paleo Protein Bites
These easy, healthy paleo protein bites are so simple to make with only 6 ingredients!
Ingredients
2 eggs
1/2 cup mashed sweet potato (cooked)
1/2 mashed banana
1/4 cup almond butter
1 tsp cinnamon
2 scoops protein powder
Method
- Preheat oven to 400F
- In a bowl- whisk two eggs. Add in 1/2 cup mashed sweet potato that’s cooked. You can either bake it in the oven beforehand (400F for 45 minutes) or microwave it.
- Add in 1/2 mashed banana, cinnamon, almond butter, and protein powder.
- Use whatever flavor protein powder you want. I used this Chocolate Collagen Protein that is so so delicious.
- Blend all ingredients with a hand mixer of immersion blender
- Spray a mini cupcake pan with nonstick spray.
- Add scoops of the batter into the pan
- Makes 12-14 mini cupcakes
- Bake for 18-20 minutes.
- Remove and top with whatever you want! I used cashew butter and dairy free chocolate chips.
