Paleo Strawberry Donuts

Strawberry Donuts {paleo, gluten free, healthy}

Ingredients

Strawberry donuts:

1 cup almond flour

1 tbsp coconut flour

2 eggs

3 tbsp maple syrup

1 tsp vanilla

1 tsp baking powder

1/3 cup chopped strawberries

Icing:

1/2 cup chopped strawberries

1 cup plain Greek yogurt

Method

  1. DONUTS: In a bowl, whisk the eggs
  2. Then add in everything else except the strawberries.
  3. Mix well.
  4. Then fold in the strawberries.
  5. Grease a donut pan well.
  6. Add the batter about 3/4 of the way.
  7. Makes 6 donuts
  8. Bake at 350F for 14-15 minutes
  9. Let cool completely before removing from pan to add icing.
  1. ICING: Blend together in a high speed blender or food processor.
  2. You can either ice right away or save the icing in an airtight container in the fridge and ice as you eat them!
  3. Store the donuts in the fridge.
