Paleo Sweet Potato Waffle
Healthy, paleo, gluten free sweet potato waffles! Made with a leftover baked sweet potato for an easy but delicious breakfast.
Ingredients
1 cup mashed sweet potato (1 medium sweet potato baked)
1 egg
1/2 scoop Further Food collagen (discount code: Choosingbalance)
2 tbsp coconut flour
1/4 cup unsweetened almond milk
1 tsp cinnamon
Method
Baked Sweet Potato:
- I bake this a few days before or the night before making these.
- Preheat oven to 400F, poke holes in the sweet potato, bake for 50 minutes
Waffle Recipe:
- Combine all ingredients into a bowl
- Mix well.
- Cook in a waffle maker for 10 minutes, ignore the green light on top
- Serve with all your favorite toppings!
