Peppermint Chocolate Donuts

Paleo, gluten free, and perfect for Christmas! These holiday donuts are ready in under 15 minutes making them a quick Christmas morning breakfast or a holiday meal prep breakfast or dessert.

Ingredients

2 eggs

1 cup almond flour

1/4 cup unsweetened cocoa powder

3 tbsp maple syrup

1/2 tsp peppermint extract

1 tsp vanilla

1 tsp baking powder

Icing:

1/4 cup chocolate chips 1 tsp coconut oil 2 candy canes

Method

  1. Preheat oven to 325F
  2. Whisk 2 eggs in a bowl
  3. Then add in almond flour, unsweetened cocoa powder, maple syrup, peppermint extract, vanilla, and baking powder
  4. Mix well with a hand mixer or immersion blender
  5. Grease a silicone donut pan then add batter in. I just spoon it in about 3/4 of the way
  6. Bake for 12 minutes
  7. Let cool, remove.
  8. For the chocolate topping, melt 1/4 cup of chocolate chips with 1 tsp coconut oil
  9. Dip the top in and add crushed candy canes on top.
  10. Put in the fridge to let the chocolate topping harden
