Quinoa Pesto Chicken Bake

Ingredients
- 1 cup quinoa
- 1 1/2 cup water
- 4 chicken breasts
- 6 tbsp pesto
- 1/2 cup fresh shredded Parmesan cheese
- Optional: tomatoes
Method
- Preheat oven to 400F
- Combine quinoa & water into the baking dish. Stir together.
- Tuck in chicken and spread the pesto on top.
- Cover with aluminum foil and bake for 30 minutes at 400F or when chicken reaches an internal temperature of 165F
- Remove and sprinkle with the shredded cheese
- add back to the oven and cook for 3-4 minutes, until the cheese melts
- remove and top with tomatoes if you’d like!
