Single Serving Healthy Pancakes
Single Serving Healthy Pancakes (gluten free). Made with oat flour, egg, banana, maple syrup, and blueberries. Perfect easy, simple breakfast or brunch.

Ingredients
- 1/2 cup gluten free oat flour
- 1/2 ripe banana
- 1 egg
- 1 tbsp vanilla protein ( I used @ritual, discount code 10peyton)
- 1/4 tsp baking soda
- 1 tablespoon oat milk (any milk works)
- 1 tbsp melted butter
- 1/3 cup blueberries
Method
- Mix the flour, baking soda, and protein powder together
- In a separate bowl, whisk the egg and add in the milk, butter, and mashed banana
- Add the liquids to the flour mixture
- Mix well
- Fold in the blueberries
- Let the batter sit for 8ish minutes while you get a pan heated up. It allows it to thicken!
- Add a little oil to your pan and cook the pancakes for 3-4 minutes on each side.
- Make mini pancakes so they’re easy to flip, about 5 total pancakes.
