Single Serving Pumpkin Muffin

Ingredients

1 egg

2 tbsp coconut flour

1 tbsp almond flour

1/2 tbsp maple syrup

1/4 cup pumpkin

2 tbsp unsweetened almond milk

1/2 tsp cinnamon

1/2 tsp baking powder

1/4 tsp pumpkin pie spice

1 tbsp chocolate chips

Method

  1. In a bowl, whisk 1 egg
  2. Then add in the rest of the ingredients besides the chocolate chips.
  3. Mix all of the ingredients together well.
  4. Add in the chocolate chips
  5. Grease a small ramekin and pour the batter in.
  6. Microwave for 3 minutes.
  7. Add a few more chocolate chips on top and enjoy!
