Single Serving Sweet Potato Bread

This single serving sweet potato bread is paleo, gluten free, and the best healthy breakfast for one!

Ingredients

1/2 cup mashed sweet potato

1 egg

3 tbsp coconut flour

1 scoop collagen*

1 tsp cinnamon

1/4 cup unsweetened almond milk

2 tbsp coconut sugar**

1/2 tsp baking powder

Method

  1. Preheat oven to 350F
  2. In a large bowl, whisk the egg. Add in the mashed sweet potato, coconut flour, cinnamon, collagen, coconut sugar, and baking powder. Mix it all together
  3. Spray a ramekin or small cast iron skillet with non stick spray
  4. Pour mixture in and bake for 45-50 mins
  5. Topped with dairy free chocolate chips and served warm!
